Burrito Bowls with Cilantro Lime Rice


1.5 cups white rice

3 cups water

1 tsp salt

1-2 tbsp of cilantro, to taste

2 tbsp lime juice

2-3 tbsp extra virgin olive oil*

2- 2 1/2 lbs chicken breast (chopped or halved)

2 taco seasoning packets (or see homemade recipe below)

2 bell peppers, chopped

1 large onion, chopped

5 garlic cloves, minced

(Optional ingredients)

1 can corn, drained

1 can black beans, drained

1 avocado

Tomatoes (canned or fresh)

Shredded cheese

Extra cilantro to garnish


For rice: Add rice and water to pot. Stir in salt, cilantro, and lime juice. Bring to a boil over high heat; around 6 minutes. Cover with lid and reduce heat to low. Begin cooking chicken while rice finishes. Cook rice about 15 minutes or until done. Gently fold to distribute cilantro, put lid back on and set aside.

For chicken: You can either cut the chicken into bite-size pieces ahead of time, or cook breasts whole and cut afterward. Sprinkle taco seasoning onto both sides of chicken. Add 2 tbsp of the extra virgin olive oil to large pan and heat on med-high. Reduce heat to medium. Add chicken and cook for 7-10 minutes; depending on size of chicken pieces. Flip and cook the other side another 7-10 minutes until cooked through and no pink inside. Put on plate and set aside.

For veggies: Heat medium pan on medium heat. You can either add the pepper and onion to the same pan you used for the chicken, *or use a new pan and add 1 tbsp olive oil to it. If you use a new pan, feel free to sprinkle a little more taco seasoning on the veggies if you like, and stir to distribute seasoning evenly. Stir occasionally until onions are almost cooked through. Reduce heat to low-medium and add garlic. Cook about a minute and remove from heat to prevent garlic from burning.

Put rice, chicken, and cooked veggies in a bowl or plate and add optional ingredients if you choose.


If you’re using corn, black beans, and/or canned tomatoes; you can add them to the onion/pepper pan and stir to combine or add them to your plate separately. Feel free to use ground beef, turkey, or steak in place of chicken. Top with avocado, sour cream, and shredded cheese if you like. Or, make it a real burrito by adding the burrito bowl ingredients to a wrap. You can also turn it into a quesadilla! There are quite a few options with this meal.


Homemade Taco Seasoning


1 tbsp chili powder

1 ½ tsp cumin

¼ tsp onion powder

¼ tsp garlic powder

½ tsp paprika

1 tsp salt

½ tsp black pepper

(Optional ingredients)

¼ tsp oregano

¼ tsp red pepper flakes


Mix all ingredients together. If you’re not a fan of really spicy foods, avoid the red pepper flakes. If you like it spicy, add more red pepper flakes and black pepper.
